做法:春笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快(kuài )熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
